I want to say I want to eat something. Should I say 「かがべたいです。」or 「かをべたいです。」?

Technically you can use either, but I would use を because べる is transitive and therefore uses the object particle. I think with が, the emphasis is on what you want to eat, while を usage emphasizes the act of eating.

I would even skip か altogether and just say べたいです.

かがべたいです。」is more emotional, like an exclamation. It's almost like a "I need to eat something" nuance instead of an emotionless "I want".
かをべたいです。」sounds more neutral or calm.

Well more exactly, 「かをべたいです。」is more common in polite context where you pay attention to your speech. And thus sounds/is more neutral or calm.

In casual speech, 「かがべたいなぁ」is more common because people pay less attention to their speech and express their emotion more easily. And using が help with expressing that.

In both case, the surronding sentences change too and the whole conversation sounds different.
It's a bit difficult to explain but just by listening to both polite conversation and casual conversation, you will notice and learn the difference.
