I want to get more into listening, but my problem is I'm not sure what to search up on YouTube. Does anyone have any good channels they watch, or ideas for subjects to look at? If you could mention their vocab level too, that would be nice. Thanks! 
I don't know your level but if you are something like N4-N3 you can start watching anime with japanese subtitles.

There are some more but those are mostly for my personal interest in philosophy
Make a list of what you usually watch on youtube in english (game, animal, science, music, etc).
Then find some keywords related to those topics and try to find a few channel that create a lot of shorts about those topics.
Preferably, really simple one that talk about one things only.
For example, if you like music instrument, you need to subscribe to that channel and watch it a bit everyday, even if you don't understand everything. That channel will probably have some of format which will be always the same, so you will quickly get used to it after some time. The things left after will be specialised vocabulary and expression. Just add them on renshuu and study them a bit everyday. You don't need to add everything btw but just the one that prevent you to understand the whole sentences.
Also, because you're familiar with the topic, even if you don't a word, some grammar, expression or kanji, you will be able to guess the meaning of those words. And with time, you will be able to deduce more and more. For example, with the same example, you may find a short about a rare instrument. You probably won't know the name in Japanese, but just from seeing it, you will be able to guess and by knowing a few common words, you will able to guess which words mean what.
The more familiar you are with the topic, the easier it will be. And it will be also useful to talk about what you like later.
Repeat that for 6 month - 1 year and you will gradually be able to watch more and more complex video. At first, you will struggle a lot probably (hence why short are better... because they are short, with fewer words, sentences, etc =p) but after a year, you probably won't struggle as much. No to understand everything but at least to not be bothered by unknown. Because you will know enough to deduce most things.
Another thing to take into accoun in the long term is not everything is equal in difficult. A shounen anime in a fantasy is probably amongst the most difficult things to watch for foreigner. Why? Because it will probably use some old japanese and also very specialized words. Those are not really things that you can study/learn about easily.
Depending on what you watch, it can be heaven or hell. But if you can find something :
It will be probably a lot easier than you expected.
In a year, I went from understanding 10% to 90% for some topic. And I'm still using that method to expand to other topics.
That works because I'm already familiar with those topic. Even for technical topic like scientific topic. Because I already know what they talking about. After, it's just a puzzle game where I associate new words, expressions with the things I know.

I watch Colonel Mofuchu on YT, Im not sure what level he is though...I can understand nothing
then again I don't know much Japanese at all aside from hiragana, a few words and 2 grammar points 
He plays video games and has a lot of Minecraft streams if you're interested in that 
My suggestion is the NHK Learn Japanese section. I rarely see them citated but their material is fantastic. I know they are old school on the style, but very competent and on point. They have also a soap opera.
I think for reading, NHK easy is good for N4-N3, I think (it's been like 8 or more years since I last looked). For listening, I think OkkeiJapanese does a fair amount of videos of different levels and he's friends with Shun and other content creators (they show up on his shows often). If you give more details, it'll be easier to help, I guess.

They have different programs from zero to hero. Easy Japanese is for beginners, for example.
I started with Comprehensible Japanese (their super beginner videos), then beginner, and now intermediate. I also listen to けんさんおかえり on YouTube, and Nihongo con Teppei for Beginners podcast (I’ve listened to all 1513 episodes). Just recently I’ve also been listening to ことのは podcast, which is great for listening to conversation!
for casual listening, i watch hiking/mountaineering and skiing videos. these are the kind of video i watch anyway, because i enjoy them. i’m very familiar with the topic, so i understand a lot of what’s going on even if i don’t understand everything that’s being said. i can even successfully guess at the meaning of new words i hear. and if nothing else, i see beautiful landscapes and sceneries which i can dream about visiting.
i imagine this approach would work well with whatever topic you’re usually interested in or usually watch.
Last days i found さきちゃん vlog on YouTube. There's a very confortable vibe and a cadual vocabulary for begginers. I used to watch Nihongo Learning (YouTube) too, their videos are slowly and good for beggin (just a lil to much slowly for me
